Cooling system question

after 20 years of maintenance my stock radiator gave up the ghost. I have a new radiator, New water pump, New radiator cap, New 187°F thermostat, and for the hell of it a new block water temperature sensor. I have an accurate aftermarket water temperature gauge a new sensor going into the block around the number 8 cylinder. Here is my question:
when driving on the freeway my water temperature is now 179° to 184°. In traffic, it ranges from 184 to a high of 190. This to me means that most of the time, the thermostat is staying closed not allowing water circulation from radiator to block. Is this situation good or bad?
any comments would be greatfully appreciated.

Thermostats don't 'all of a sudden' pop open at a rated temperature, it's a gradual opening to the rated temperature.
Take a 210 F thermostat and put it in a pot of water and start heating it, you can watch the thermostat opening long before the water starts boiling.
