Oil burning smell

Oil burning smell 01 SS 88K has only done it twice since I bought her back in Nov last year.
No visible leaks, but I do have to add about a quart of oil once every 3 months, old oil isn't sparkly when shining a light on it.
I only drive her about 2 full weeks out of the month and about 500 miles a month since she's my second car and I rotate between her and my other car every week so one of them sits for 7 days straight.

Are you smelling this from the engine bay, or out of the tail pipes? Could be a slightly weeping gasket that's responsible for the smell, especially if it happens during engine warm up after having sat for a while (like if a valve cover gasket weeps a bit of oil on the exhaust manifolds/headers while it sits). But that wouldn't be the source of your missing 1 quart per ~1500 miles.

Exhaust is clear on start up, idle, WOT, no smoke at all.
I've only smelled it twice in the 8 months of owning her so far and both times I could smell the oil burning smell when I was driving, I did stop at a gas station and popped the hood but everything is dry.
