Default HELP Please!! Running hot

I just got my car back (95 trans am, 125,000 miles) from the shop from getting the drivers side exhaust manifold gasket changed. Driving down the highway at 70mph in 65 degree weather the temp guage is showin about 190. Driving around town in the same temp, the guage is readin like 240. If you turn on the air conditioner all the way, it goes back down to around 215. I can hear the fans kick on without turning the A/C on so I dont think its that but I could be wrong. I don't remember it running even close to that hot on the highway and I KNOW it wasn't ever over 215 in town ever. Please help me!!
Ty

I know you said you can hear your fans come on with out the ac but it definately sounds like your fans are NOT coming on. If the temperature goes down when you turn on the AC, then the fans are working. The PCM turns on the primary low speed fan when engine temperatures are between 215-220 degrees and the secondary high speed fan when temperatures reach 226-230 degrees. Check your fan relays for continuity. The relays are located on the drivers side under the hood in the fuse/relay box.
