If you're only removing the heads and not the timing cover... head gaskets,(must) and I would do the intake manifold gaskets. Many have had good luck reuseing the intake gaskets but I've been burned with a vac leak before and had to take the intake back off 10 min's after starting the car. so I spend alittle more $$. If the exhaust manifold gaskets are old i would do those too.

Make sure your head doesn't have the "notch", and if it doesn't you need to run the GM MLS gaskets that came on the later year LS1's. Much stronger, and lot less cleanup if you ever have to remove the heads again.
