AIR & EGR Removal?
For the EGR, just unbolt it from the manifold, there are two 15mm bolts that go in the head, and one 10mm bolt that bolts into the intake. Once it's off, find a short bolt that will thread into the EGR port in the manifold. Easier and saves the trouble of trying to find/make a block off plate. For the hole up top, you can go to Advanced Auto Parts and buy a rubber expandable freeze plug to put into the intake.
For the A.I.R., basically the same thing. Unbolt them from the headers, stick bolts in the holes. Pull the plumbing out from behind the intake, and follow that big hose down to where it goes inside the fender. You can go up underneath to pull the actual pump out. It's held in there by four 10mm bolts.
You'll need to get them tuned out otherwise it'll throw SES codes. I can tune them out for you if you want, and a do a full tune in the process. I'm in Georgia.
Good luck.
