A few Q's before the cam goes in..
FTRA, Lid, SLP 85mm MAF, FLP LTs, Bellows, 160 stat, Cutout.
1. How much will I be leaving on the table if I stay with a stock throttle body vs. aftermarket? HP wise? ET wise?
2. The MAF wars never seem to end. I am wondering if I should leave 85mm MAF in there since it will be tuned, or should I put the stock MAF back on before the cam and tune (since everyone seems to make more power w/ a stock MAF)? It seems to me that a TUNED aftermarket MAF would outperform a stock MAF...or am I crazy??

I suggest you slap on a ported TB before tuning if you want a ported TB. Keep the 85mm MAF, but take a stocker along to the tuner's just in case.
