Ok I just picked up a set of ceramic coated pacesetters from another member and I'm just wondering what's the best gaskets to use?

Yes. Go to any GM Dealership and ask for TWO 12617944

That is the part number for GM LS1/LS6/LS2/LS3/L99/L98 Exhaust Manifold Gasket, PER GASKET

x5..................used them to install my first set of lt's, used same set of gaskets when i did a head cam swap, and used the same set of gaskets on my new headers....still working fine

I'd re-use the stock ones if there in decent shape, same with the bolts.
