Default Cat Delete on A '99 Trans Am General Question

I plan on cutting out my cats next week. My question is, does the cat need to be tuned out if I remove it so the SES light won't come on? Or I can buy rear o2 sims for the rear to trick the PCM thinking there is a cat in place? I just don't want to throw a code. I have stock exhaust manifolds and no ORY either. People are saying that I don't need to tune out the cats and some are saying that I can buy rear o2 sims and it won't throw a code, I just don't know.

Any ideas?

I placed gutted cats in my 2000 camaro, I have driven 9000 miles since with NO 02 code,

there is also a good bit of leaking from my cats before it hits the rear 02 so that's just my own story
