can i run 2 -10 fittings off the valley cover for my catch can?

Are you referring to two separate fittings of 10AN- size?

The valve covers have more splashing around than the valley cover, especially if you autocross/road race. So the valley cover could be a wise choice if you can make it fit. YMMV

yeah i can weld 2 -10 fittings onto the valley cover no problem

From what I've gathered venting the crankcase from the valley cover through a breather can will work just fine.
