Dieseling with a carb a lot of times can come from running lean which creates really high cylinder temps that allows the fuel to be ignited due to compression and heat alone and that's why it keeps running after shut down when there is no spark.
You can try pulling a little timing or richening it up to see which helps. Also, are coolant temps in check or is it running hot?
Does it ping,clatter, or detonate? Does it struggle to start after it's hot?
