Where to get 243 heads?
I believe 799 heads are the same, just different LS2 casting number. Am i right?
BTW there is not much difference, seat of the pants anyway, between 241 and 243. You could shave the 241 to increase the compression. Lots of 241's around.

243 and 799 heads came on every Gen IV 4.8 and 5.3 truck engine, making them FAR more common than LS1 heads.
799 heads are sand cast, where 243's are investment cast. It's not an LS2 number, as 799's never came on LS2's.

I would get a set from Facebook (Market Place). You can easily re-condition them yourself. You can buy a valve spring removal tool, if they need new springs. Other than that, some shop towels and carb cleaner will work wonders.
