Default Electric fans

What controls the electric fan turning on and off? Is it a simple stand alone sensor or does it go through the computer?
I ask because I'm looking into putting electric fans on my truck. My thought was to use an OEM dual temp fan switch (from what kind of vehicle I don't know yet) to control the fUrd Windstar dual fan/shroud setup that I bought. I'm pretty sure that in the F-bodys the fan is controlled by the computer, not just a simple thermostatic relay, but I wanted to check with someone who knows before I go reinventing the wheel...
