Default New engine install, cooling issue..HELP..

OK, new motor is in, got my tune from Texas Speed and when they set it up I had a 160 stat added and now it wont open Im assuming..Car is getting very hot and Im nervous..How much fluid will the new motor take? Ive got 2 g.'s of Dex in it now..Car is getting up to 250 deg...Seems like alot of air in the system, bubbling alot when we add fluid..I dont want to get the car too hot and hurt something..WHere is this damn thing supposed to run???

It could be the water pump, a hose, fans not coming on, etc. Need more info. I assume the water pump and thermostat are new since its a new engine.
How quick does the temp increase?
I run mine 180-190 deg F.

Shut it off let it cool down and then start again. It'll be OK. Just a lot of air is all...

Also make sure that front crossover pipe between the heads is not blocked off and is feeding back into the radiator...or through the TB and back into the radiator. Keep adding water til it stops taking it...
