cat delete code after header install, can I wait on it?

cat delete code after header install, can I wait on it? my 2001 z28 m6 just threw a po430 SES code which means my cats are crapping out. I know this for fact cause I can here them braking a part.
With this said I am looking at installing headers, ORY, no cats, no sims but instead have the cat code deleted.
after I install the headers it will be about 2weeks before I can have the cat code deleted, so the computer will be freaking out and throwing codes.
Will the car still be drivable, or will this raise some issues? I'm guessing it will throw the same code and run fine.

You can but unless you run o2 sims your gas mileage is going to suck. You don't have to have them deleted with the sims.
