Default O2 Sensor question.

I just purchased these headers from Byunspeed and I am a little baffled about the mechanics for some reason. Without seeing them yet, I am left to believe they are O2 bunged but are designed to be ran without cats. Assuming that is right, I have a whole lot of other questions, or even if its wrong just some general questions about O2 sensors.

As far as I know, O2 sensors are suppose to read the oxygen level in the exhaust stream by creating voltage via the zerconium dioxide crystals. This tells the computer when the engine is running rich, lean, etc. So if like a lot of people on here use O2 sims, run with the sensors just plugged up somewhere, or just delete the codes, how does the engine know how to adjust the ratio to meet stiochimetric (or however the hell you spell that) ration (14.7:1)? Also, when the O2 reaches 600degrees it signals the computer to run the engine in closed loop, with the O2 removed, how does this happen as well?

There are two sets- precat and postcat on the stock exhaust. The precat ones tell the computer the O2 readings for AF ratios, and the back ones merely determine if your cats have gone bad. The O2 sims are ONLY used for the "postcat" holes on aftermarket exhausts...you must use real O2 sensors on the fronts for the engine to run properly.

So the precat O2's are what I still have on my headers, but the postcats need to be deleted or simmed. I think I understand. Thanks.
