Throttle Body
I was told that the stock TB only opens 80%. I was wondering if that was true? If it is true Should you grind the stop so that it opens 100% or 90 degs.? And how much would it really help?

See that's what I thought. I mean come on GM is not stupid if the TB opens 80% there is a reason for it. I'm not worried about my current set up, I'm saving the cash for my new one.

If you send it to be ported, they will grind the stop so that it opens correctly. GM did not do this for a reason, some people's open farther than others due to flaws.
Check out installuniversity.com, there is a nice writeup on how to test/fix the problem. You will need some type of grinding device or file, a volt meter, and a few feet of spare (small) wire. Unless you have autotap or somthing, you cannot see the actual % that it is opening. You can, however, use a voltmeter to tap into the output signal of the throttle position sensor. 4.7 volts is the max. Any higher and you will get the SES code, most people grind and check several times untill they reach 4.65ish volts.
