Default Re-calibrated MAF

I heard that some makes MAF sensor for LS1 that are recalibrated for different injector sizes like Ford's MAF. Can anyone tell me if that is true or not?

I haven't heard that. Our MAF's work differently than the older Ford style.

I remember an article on a big bore LS1 in Popular Hot Rodding and they said Jim Pace (I think) makes the re-calibrated MAF. I can't seem to back that up.

Yes. there are re-calibrated MAFs.. SLP, PACE, GMS.. but they are not injector specific.

If you are thinking about bigger injectors.. a new MAF is not required. But a MAF Translator (MAFT) or custom tuning is recommended.

Yes, we do have the ability. I ran 38's that way for over a year. There are a number of people in the country running 42's also with these MAF's.
