Default Water Temp Question

I've read on this and other boards about how your SS's are running 180 degrees, 200 degrees, the thermostat is 195 degrees or 180 degrees. What temp is hot for these cars. As hot as it's been lately here in Michigan (and I know it's hotter elsewhere around the country), I've watched on Autotap the temps of my car as I drive it daily. I don't do this everyday, but once in a great while. I've seen the temp as low as 198 but I've also seen it go as high as 229. Them guage always reads 210, maybe a tweek higher or lower, but always in that range. Even today when the temps were in the high 70's here, the guage read just a hair over 210. I'm figuring the car was acttually running 220. At what temperature should I start worrying?

Factory = 195 degree thermostat. Temps run from there up to 210 or more. GM runs them hot on purpose for emissions (all GM vehicles are like this). Also, your gauge is far from accurate, so I wouldn't bet the farm on what it reads.

Aftermarket choice #1 = 180 degree thermostat

Aftermarket choise #2 = 160 degree thermostat

I have a 160stat my guage still reads 210 but on scanmaster it reads 175 or so depending the factory guage will always read wrong.

Trip ... Dallas tx -> Pensicola FL and back.
4th july week 2002.
hotcam,slpheaders kit,160F thermostat.
During the day with digital temp gauge
I was seeing 220 with AC on at 75MPH outside
temp 95-98.
Night temp 195 with AC on at 75 MPH outside
temp 85ish. I assume the heat from the road
was pretty high with lots of traffic during
the day.
Running around town 98F I see temps 200-205 with
AC on max.
My stock gauge is always 210.
I would start getting nervous with 235+

As reference, my heads and cam car with 160 degree thermostat mine still reads 183 on A-Tap on a 75-85 degree day. Meanwhile my gauge shows just above 160.
