I just got 3" true duals run yesterday into 1 chamber flowmasters. I dont have any mid-pipe. Im wondering if cut in a H mid-pipe would it quieten it down a little???

it will a little bit. every inch of pipe you add will quiet it down some..just not much. that and the H-pipe will cause sound waves to bounce into each other and cancel themselves out. it will quiet it down...just don't expect a big difference. in fact, don't be surprised if you can't even tell if its quieter. it will still be loud.
I got to looking around also and see that the guy at the muffler shop put the 2.5" 1 chamber which are the loud as ****. But you can get the 2.5" 40 series there only 3" longer but are a 2 chamber design, will they flow just as good and are they any quieter??

yes, a 40 series will be quieter. no, they can't physically flow as well because of the extra chamber. the question is, do you need all that flow? you're pushing around 400 horsepower at the crank, give or take with your numbers in sig. this means each muffler must only support 200 horsepower since they each only support 4 cylinders (the advantage of true duals). i'm sure the 40 series can handle that, especially if you get a super 40, or (maybe) even better, the new super 44 that looks very promising.
the question is, how are you going to fit those big old mufflers under the car? the single chambers are hard enough. the two chambers are even bigger. if you can do it, more power to you, but i see issues with fitment.
