Alright heres the deal. service engine light came on so took it in to have the code ran and it came up as the drivers side cat. So heres my question... Can you hollow the cat out and if you can will it mess up the o2 sensor? something else i was thinking was just gettin rid of them, welding pipe in their place and buying o2 eliminators. What you guys think is my best option?

Depending on what code was set, and I'm assuming it was the rear O2 sensor for that bank, hacking the cat won't fix it. The rear O2 sensor is looking for catalyst-reacted air, and if you hollow out the cat it'll still set the code.

It's more likely, if you're getting a rear O2 sensor code, that the O2 sensor is bad or the wiring damaged. Diagnose accordingly.

There was a recall on the cats for our cars. I've the the notice at home it the filling cabinet.

the code wasn't for the o2 sensor it was for the cat. thats why i was wondering if deleting the cat or solve my problem or cause anther.

What was the code #?

The only codes related to the catalysts I can recall are triggered by rear O2 sensor inputs.
