A cut out with no cats will give you rasp. I never really open mine fully. Usually just crack it til it sounds good. Otherwise its just LOUD. But if Im racing or running the car real hard, Ill open it all the way.
At idle the cut out makes it sounds pretty cool though. At idle and just putzing around it will sound great. But when you get on it, it gets alittle dirty sounding. I have a vid similar to the one you posted...but its not online. I could try to upload it as an example for ya.
Ive heard people have good luck with a resonator behind the cut out. Or put some high flow cats back on. Would cut down on the rasp.
Do some more searching on youtube and on ls1tech and you'll find lots more clips of peoples set ups and all.

Ls1s seem to be raspy as hell without a muffler. versus my buddies fox body which sounded its best with just the x pipe on and no mufflers.. .It was actually pretty queit when you were off the gas and then when you got on the gas. Ohh my god, It sounded great.

That sounds pretty deep to me at idle. What headers and Y do you have?
That's all getting replaced with PS LT's, ORY and Most likely Hooker Aerochamber since i want a deep rumble becase the magnaflow is WAY too quiet for me, cut-out is staying.
