I believe they are coated to keep rust away, and increase the longevity of the headers. Also maybe so that the exhaust air coming out doesn't cool too quickly, so I guess it's a little bit of an insulator, but I'm sure someone else knows better then I.

Yeah it is supposed to keep rust from happening and look better also. I have had coated hookers on my 66' truck for two years and they already have surface rust in some areas. I opted for the coated hookers on my z28 also but now wish I would have just got the painted and saved a few bucks. You really can't see much of the header on ls1's and eventually the coated ones will look bad also. It is really up to you!

The coating keeps heat down under the hood... if you like cooking hotdog on your headers then don’t get the coating… one thing to watch out for after you get the headers in “they will seem to be cool if you put your hand over them but the surface of the headers will be very hot.
I got my hookers with ceramic and I painted the y-pipe with high temp paint, I put three or so coats on it.
