stock or fel-pro is common as well as cosmetic depending if your heads are milled... did you full smooth the block decks? takes about an hour or two to fully get them smooth if its that first time the heads have been off

Header gaskets 
. I've seen a few people on here that have had problems with the copper ones. Try the GM ones. I got new ones for my headers and they don't leak at all.
