Default Operating temp after head and cam

what is tha operating temp after head and cam.
I am running around 210-215 is this normal or is it to hot?
What should be down to cool it down.

Since you have edit I would do a few things. Buy a 160 degree thermostat and see if that helps. Be sure to adjust your fan activation points with the new thermo. If that does not work try switching back to your old pulley. Your car may not like the underdrive affect. Since you have a 2001 make sure you are not going by the dash guage either, you need to check temps using a scan tool b/c the dash gauge sucks.

what that 160* stat be to low for me being that i live in phx az where it is 100+ almost everyday
