There is a very nice video out there, don't know if its still for sale. I bought it on Ebay and it had a step by step walk through of a rebuild of a LM7, exact same process with the LS1.
There is also a very informative SA book that sells at Autozone next to the vehicle manuals. It's called How to Build High Performance Chevy LS1/LS6 V-8's. You can also buy it on Ebay or Amazon, etc. I read it from cover to cover a long time ago, great book!

I used a Chiltons book for the 98-02 F-body as a reference. It gives step by step instructions and all the info you need (torque specs, sequence, pics etc).
