How Fast Can You Spin A LS1
Personally, I turned my stock bottom end car (02 model so it had the better rod bolts) pretty hard for close to 20k and never had an issue. Actual shifts occurred at about 6900. Prior to that rpm, I had the limiter set to 7100 trying different shift points at the track.
A buddy of mine turned his 00 bottom end car (weaker rod bolts) to 6800 for around 10k with no issue either.

It's worth mentioning that alot of guys with stock 2 bolt head/cam LT1's wind theirs to 6500+ without causing problems. If those 2 bolt motors with heavier pistons and weaker rods (and probably bolts) can handle this, any LS1 certainly could.

In 01 the rod bolts that came with the newly introduced LS6 were also used in the LS1 cars, but ONLY the Z06 got a bump in the rev limiter because it needed it with the better flowing heads and larger cam shaft. Also, the stock fuel cutoff for an LS6 is 6600.
