Whats the biggest cam you cant put on a LS1 with stock springs and what kind of power would you be looking at.

Well, the next step would prolly be a Z06 cam & they even have upgraded springs required, so the answer to your question is none.
Unless you find one that is a mild lift but is prolly not worth it IMO.

seeing as how the stock springs are rated to about .500, none.

Well then my question would be what would be the biggest cam you could go with on a stock bottom end with springs in your stock heads.

biggest i've seen is the TR236, g5x2, g5x3, m2, ect. those would require a good dual spring, something like the comps 921's.

the question you need to ask yourself is what setup your trying to build and what your goals are, you might not need a "monster" cam.

You can go pretty big, the bottom end is good for awhile. Seeing you have an LT1, or LT4 for that matter, you might want to take this topic to CZ28.com.

Bigger is not always better. You need to consider future mods, goals for the car, what time you would like to run, driveability, so on and so forth.
