how much would you guys cut the heads to true them up again? .003"?
also, lets say i buy a used cam and take it to a machine shop for the machinist to check out and give the green light. what do i need to make sure he does besides the obvious of making sure that there are no pits on the cam and that the cam is straight?

I wouldnt bother taking the cam to a machine shop unless the seller is extra shady. Cam damage is usually pretty obvious. Rust pitting, lobe damage, main scoring, etc
Have you overheated the engines or been given any reason to think the heads/deck are out of true? They dont warp for no reason. Dont mill the heads unless you need to, or are after more compression

the only reasoning i have for the passenger head to not be true is that i left the head torqued to the block at point 3,6,7 and 10 for between 12 and 24 hours before it was removed completely from the block.
