Are you SURE everything is tightend correctly? If you have a rocker bolt that starts off loose, it will get worse obviously. We had that happen during my H/C install. Especially with a couple people working on them, its easy to miss one and assume the other guy caught it. It started off as a quiet knock/tap then got louder. Pulled the valve covers off and found it pretty quickly.

It sounds like what happened to me. I installed my cam only not the heads I did that later on, but I started the car after the cam install let it idle and everything was fine. I then turned the car off cleaned up the garage and after that I took her for a short spin, on my way back the car picked up this weird tick so I was like WTF. The weird part about it is the tick will come and go, sometimes it ticks very loud and other times the motor is dead silent. I still to this day do not know what it is, but the car has been doing this for at least a year now and it is still running strong. My guess is that it is a lifter. I hoping to get a chance to pull it apart this winter. If I findout anything I will post it up.

do you know the push rod length 7.40 stock?
were the heads milled?
are the spring retainers interfering with the rockers
did you check for clearance.
did you torque and add locktight to the rocker bolts?
is the geometry ok between valve stem and rocker tip?
what head gasket do you have-stock .055 ?
did you posibly misalgn a pushrod, tighten the rocker and then the rod pops into to slot on the rocker causing a knock due to a loose rocker
there are a lot of items to be aware of
