Oil Consumption Is this normal... I put 5.5 quarts of synthetic at the oil change, after about 3000 miles of normal and some quick driving my low oil light usually comes on. Then I add a quart and after 5,000 miles change the oil again.

Doesn't sound too far out of the ordinary for a high mileage LS1. You might go ahead and check to see if your PCV system is still working correctly. Its very common that the stock PCV valve will break and allow oil to get sucked up into the intake. A leakdown test is also a good way to make sure that the motor is still in decent shape.
