Default High oil temp's in LQ9

I have a LQ9 in a fox body mustang. Everything seems to be right, no check engine, no strange sounds, runs great, but the oil temps seem high.

For example, engine temp will be 180 and after 20 mins of driving the oil temp will be 200+. Kind of strange since I'd assume the oil would not get hotter then the coolant. Only thing I can possibly think of is that I am using the oil cooler block off plate as my source for oil temp and the long tube headers come decently close to the outside of the block off plate (about 4-5inch of clearance).

You think I am just seeing heat soak in the block off plate causing the temp to rise or is there another issue that I should look at here.
