Default Head Direction?
This may sound stupid but which way do LS1 heads bolt on with 5 holes in rear and 4 holes in front or 5 holes in front and 4 holes in rear, in regards to accessory bolt holes.

Well how about which side does the temp sensor go drivers or passenger?

Temp sensor has always been on the drivers side in the engines I've seen....otherwise both heads are the same.
