I wouldn't worry about it. I just did springs in my LS6 and the installed height was basically the same as yours at 1.785".

In order for you to get 1.800", you'd have to have the spring hole in the head machined 0.015" deeper ... not worth it IMO. A couple of pounds more pre-load isn't gonna matter at all.
