Default 0w40?

Can someone explain what those numbers mean and how they affect the engine. I know they are weights of oils, but i drive my camaro hard. I think thats the oil i want. 0 W means it flows well right? and 40 means its pretty heavy so good protection right? Ive been running 10W 30 and i just run it cuz my dad says so. I want more protection tho, so i should go with a 0 W 40?
