The car has 60k miles and just bolt ons and if I do a low speed (first gear pull) the oil pressure drops to around 25 psi until I shift up and it’s not pulling as hard due to higher speed and gear ratio from shifting up. After I shift into second and continue the pull it goes up to 70ish psi like it should. Any ideas because I’m getting worried ab running the car hard with only 25psi.

Sounds like you're sucking the pan dry for a short bit. Add a quart and see if it still does it.
