Don't worry about piston noise on an LS it's a non issue.
They are hot rod engines and built a little loose on purposeand hence the noise on the early LS ones they all do it even had a brand new 2011 6.2 it did it less but still made it. The cause of the noise in the early ones was they used a slipper skirt piston that was non coated so until everything warmed up and got to operating temps and the clearances closed up they made noise. My memories getting rusty but wanna say around mid 02-03 on the escalade 6.0s they then began using a graffoil coating on the piston skirts which quietened them up a bunch but they still made noise.

I believe that is a 4.8/5.3 truck cam and those heads have way more spring than you need for it. I have a cam similar to what you are looking at in my Yukon with 5.3 and its good for that application where you need to maintain low speed torque. Valvetrain is quieter than stock with LS6 valve springs. However, I would go bigger than that in a Fbody. Get something in the 216-224 range and <.600 lift. I personally like sub .600 lift stuff that works with LS6 or PAC 1218 springs for a driver. Just seem like they run quieter vs cams that need heavy dual springs. In a weekend only toy then it wouldn't matter as much.

Does it need a stall ?

That looks like a pretty good cam to run. Leave some room in your budget if you swap the cam or go with ported heads to get a tune. I had to tune my LS1 after I installed the ported 243s.
