A few nights ago I was racing a guy in a Mustang and when I went to shift into third my clutch pedal stuck to the floor and I couldn't shift. My car stayed redlined for a few seconds(never hit the rev limiter though) and now my oil pressure is lower than normal. It used to idle at around 40 psi and now it's about 30 psi. The oil level is fine. Is it possible I could have damaged something that night? Could my oil pump be on its way out?

If you saw a 10 psi drop and can nail it back to one instance like that, I would say yes. Did you let it cool down and then drive it normal again to see if the pressure came back up? When the oil gets hot now, is it still 10 psi lower then normal? If so, I would say yes, something got hurt. Might want to tear into it now before it gets worse. The worse it gets the more money it will take to fix it.
