Default [Q] temp always stays below 175

I changed coolant level sensor, coolant temperature sensor
(driver side, engine block sensor),
flashed the old coolant out, put new dexcool compatible 50/50
prestone 150K miles/5year coolant, added 1.5 bottles of waterwater

and since then my gauge never shows over 175 engine temperature.

Now I bought also a laser temperature meter, and measuring the
temperature I get

172 degrees by the coolant temperature sensor (driver side, engine block)
about 138 on the MAF airflowcensor
about 190 on the headers themselves
my gauge shows 173-175 even after leaving the car running still
for 15 minutes.

so my question is, is my new coolant temp. sensor faulty (I got
it from a dealer ship for 28$)
or is my car really running that cool
(south FL, very humid, very hot)

'98 LS1 formula (hookers headers/exaust, SLP mass airflow censor,
LS1 ram air lid,160 thermostat, tuned with HP tuner software )

thanks in advance

Is that on the interstate at 70 mph with the windows down or in stop and go traffic during the middle of the day with the A/C "ON". I guarantee, as Boudreaux would say, you water temp isn't really staying that cool in south Florida in the summertime even if you were running 100% Wet Water. My temp is 185 unless I get into traffic and then it starts to climb. With the A/C "ON" it will go a little higher. This happened AFTER you changed the sender? The sender puts out an analog voltage which you should be able to check with a DVM on the stove in a pot of water. The resistance should decrease as the temp increases and the resistance value should change in a linear fashion with the way the water temp increases.

this is all stop&go traffic (or the one time I left it running for about 15 minutes
to see what it will do (AC was on)

my fans are now set to come on at lower temperatures now (I have the 160 thermostat, and just a week ago set it to be lower, but the temp stayed low
even before that)

probably the new coolant temperature sensor is faulty... should it show the temperature on the engine block or the headers? (it is measure the coolant temp,
but I do not know if there is any internal adjustment...)

Also when i was tuning my car with HP tuners the guy said that the computer
was reading about 182 when my gage was showing 175-179... so where would the
computer be getting that reading from?

thanks

replaced coolant temp. sensor (the one on the engine block, driver side),
but still. The gauge shows 175 or so, while Engine block is around 198

Do you guys know what sensor exactly is responsible for the temp gauge?

Thanks
