Default oil change = louder valvetrain?

i had about 2000 miles on my mobil 1 0w-30.. didn't think much of it was going to wait until about 2500/3000 to do the oil change, when suddenly i saw my oil pressure gauge flicker (went to about 65 psi then dropped to like 40 then back up) when accelerating one time. i immediately pulled over to find that i was a quart low... great. So then i putted the next mile and a half home. Changed my oil switched to mobil 1 5w-40 (truck and suv blend) with the mobil 1 filter. Didn't think much of the whole truck and suv thing and autobarn didnt have the 0w-40 i was looking to put in so i had to settle. Changed the oil, started it up and now my valvetrain is louder? Oil is at the correct level, pressure is great (40 at hot idle, 70/75 accelerating hard) but for some reason i can hear the **** going on under my valve covers. Could this be from the oil? If anything i thought a heavier weight would quiet the valvetrain down more-so. (BTW the engine did run smoother after the change). All I know is that it is a very unattractive sound, and I don't like it.
