Take a stock LS1 for example, the bore (diameter of the piston) is 3.898" and the stroke (the lenght the piston travel from top of cylinder to bottom) is 3.622".
Applying the formula given by shinsetsu (bore x bore x stroke x 0.7854 x number of cylinders) : 3.898 x 3.898 x 3.622 x 0.7854 x 8 = 345.79 cubic inches, or 346ci.
To convert in liters, multiply by 0.016383 like BlueSix said : 345.79ci x 0.016383 = 5.665 liters, or 5.7L.
