Lots of shops make strokers, but from what I've read here since I joined, I would recommend:
HPE
LME
FUTRAL
as my top 3 choices.

slap an FM13 230/232 114 LSA, its a baby cam for a 383, good for daily driving, and works well with NOS.

500hp at the wheels? Is this a track car or daily driver? Lost of ways to make that kind of power, all depends on what your looking to do with the car. You can get there with a 383 and a big cam and nice heads and maybe a shot, or you can get there with the stock bottom end and some nice head and a shot, or you can start talking FI! Which at 500 rwhp will require a forged bottom end to run sfaely all the time. Lots of options here, how much money do you have to spend also is a big question.

Dont waste your money on afr 205's. I've seen the same results with 5.3 heads from Texas Speed but for a lot less money. IF you just have to buy afr go 225 and hope for better results. The 5.3 heads that TSP and TEA put out flow just as good and produce the same results, from the dyno's I've seen.
