Added cam and lost peak torque?
Also the rev limiter is set at 6600 (not exactly sure). The car does not rev pass 6600 and the 7000+ reading is because of the 3400 converter my car has.
If you understand this, then you know that dynoing an unlocked high stall A4 does not provide you accurate information for tuning anything other than top end HP. The converter slip and flash also throw off the rpm readings. Given your shift extension, the readings below 5000 rpm are meaningless.
If you truly want to tune your A/F in the 3000 - 5000 rpm range, you'll need to go back and do a couple pulls with the converter locked. Possibly combine that with a couple extra degrees of timing in the mid range and you'll get a decent benefit from making the extra investment in tuning and dyno time. Additionally you'll know what your true TQ and HP are, and you can measure the converter's efficency.
