Is there a list of which bolts/studs require thread sealant vs. thread lube during assembly?

Not a compiled list. In other words, check out www.ls1howto.com and www.installuniversity.com to see specifics , like heads or headers etc. But no one has a complete compiled list of every bolt on an f-bod/y-bod and what to use on it.

Viper - Sorry I wasn't clear. I didn't mean the whole car. I only mean't engine.
I know some engine bolts require sealant and some don't.
Would make it easier if there was a list for engine assembly.

Cool.

For the motor, you could buy a book from David Vizard about the LS1 Engine. In 4 years on this board I haven't seen a list for the engine alone.

Thread sealant on the thread portion. Locktite under the washers. The sealant is if you have ported heads; typically the intake port is ported through to the bolt hole for the rocker.
