Usually if it is an installed package, it will come with almost everything you need. Just call a shop up and ask what it comes with and what they can do for you. You will learn a lot more about a shop and who you want to do business with by speaking with them on the phone.

Do new rods, pistons, retainers, springs come with the package?
you'll need hardened pushrods, better valvesprings, probably want to upgrade retainers, stock pistons work fine. Heads, cam, intake, valvetrain all fall under the catagory of "top end" while pistons, connnecting rods, crankshaft, and block are "bottom end". As mentioned above, different vendors sell packages of different completeness. You'll also need new headbolts, new head gaskets, and a new crankbolt.
What else do I need to buy with a heads/cam package such as the ARE setups from ls1speed?
You've got a stall and nitrous, you need headers.
