Default What engine oils to use ?

I'm finally geting around to doing my cam swap and I am wondering if I should go with a thicker viscosity oil and what brand. It seems like Mobil 1 is the favorite, but alot of people like the German Castrol too.

Should I get the 0W-30 GC, 5/10W-30 Mobil, or one of the thicker 0/10W-40 oils I see some people using with bigger cams?

The cam being installed is the F14 (not highlift), and the temp around here now can be anywere from 5-30 degrees but the cars mostly sits in the garage in the winter and gets driven in the summer were temps are usually about 85 degrees and ocasionally there is a hot day around 95-100.
