Default Milling heads, pros vs. cons

Can anyone tell me the pros and cons of milling heads? What exactly is done? Also, what effect does it have on nitrous applications(100-150 shot)? And finally, how do you determine how much to mill?

Milling limits your cam options if you do not have valve reliefs..
