Default 160 Degree Stat question

Ok Mr. Wizard.

I live in Southern California and would like to put a 160' thermostat in my 2000 Z28 to help it not run hot due to the average 80 degree weather and stop and go traffic of our freeways. I know that the 2000 series cars basically have an idiot light and it never moves off of 210. I do not plan on using an HPP III to change anything so that isn’t a factor. My questions are. Should I use the 160 degree unit? Will it make me run to cool? What is the down side of running to cool and what would my symptoms be of being to cool? What is considered to cool? Will it be ok with a 160’ stat since I live in So Cal and it's always fairly warm here? <img border="0" title="" alt="[Cool]" src="gr_images/icons/cool.gif" />
