I would have used 7.400 push rods for a quieter valvetrain, the 7.350s might be a bit loud.
The rest is good, gap the plugs at .040

You are still guessing on the pushrod length. Why not get an adjustable pushrod and measure the correct length and do it right once. You are deciding on head gasket because of chamber size instead of the other way around. It's the correct combination of parts and assembly that make some guys make good power and go FAST.
