What oil are you running now? Are you positive that the cooler fan is operating properly?

Where is your cooler? Where is the oil temp gauge sender? Have you measured the cooler's in/out temps at its fittings to see what it's accomplishing? What's the temp with the cooler bypassed?

More important is what is your oil pressure at that temperature? What oil are you running?

If at hot idle your pressure looks normal I'd almost take a look at the oil temp gauge / sender and see if its accurate. 270 is really high. With my 19row+fan oil cooler I see my oil temperature in the 190-210 range That said that is with the fan always on. But the most I've seen with it regulated by a thermostat is around 235.
