Yeah. I'm thinking the only real difference between the 295cc cathedral heads and the LS7 '305' heads is the intake manifold you'll be using.
Head performance would probably, pretty much be a wash.

I would expect that the 295cc and 305cc head would be pretty close in terms of peak power, but the LS7 port would hang onto the power later after peak than the cathedral port due to the better angle of approach that the LS7 port has. That could be a big deal in a combo topped with a carb style manifold or a Hi-Ram, but my be less significant in a long runner FAST manifold.
Phonix- I think if you went with a rectangular port on a motor that size you'll need a lot of rear gear to get it u into the powerband.
